🍋 Tamarind Rice (Puliyogare)

🛒 Ingredients

For the Rice

  • 2 cups Vinika Foods Premium Sona Masuri Rice
  • 4 cups water
  • 1 tsp oil
  • Salt to taste

For the Tamarind Paste

  • Lemon-sized tamarind (soaked in warm water)
  • 2 tbsp sesame oil
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 8–10 dried red chillies
  • 2 green chillies, slit
  • 2 sprigs curry leaves
  • ¼ tsp asafoetida (hing)
  • ½ tsp turmeric powder
  • 2 tbsp jaggery (grated)
  • Salt to taste

For the Tempering

  • 3 tbsp sesame oil
  • ¼ cup peanuts
  • 2 tbsp cashew nuts
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 2 dried red chillies
  • Curry leaves

👨‍🍳 Method

1. Cook the Rice
Wash and cook the Vinika Foods Premium Sona Masuri Rice until each grain is soft yet separate. Spread the cooked rice on a large plate, drizzle with a little sesame oil, and allow it to cool completely.

2. Prepare the Tamarind Extract
Squeeze the soaked tamarind to extract a thick pulp. Strain and keep aside.

3. Make the Tamarind Paste
Heat sesame oil in a pan. Add mustard seeds, chana dal, urad dal, dried red chillies, green chillies, curry leaves, and asafoetida. Once aromatic, pour in the tamarind extract. Add turmeric, jaggery, and salt. Simmer on low heat until the mixture thickens into a glossy paste.

4. Prepare the Tempering
In another pan, heat sesame oil and roast peanuts and cashew nuts until golden. Add mustard seeds, chana dal, urad dal, dried red chillies, and curry leaves. Cook until fragrant.

5. Mix Everything Together
Add the prepared tamarind paste to the cooled rice and gently mix until every grain is evenly coated. Fold in the crunchy tempering and let the rice rest for 15–20 minutes so the flavours blend beautifully.

6. Serve & Enjoy
Serve with papad, curd, pickle, or crispy potato fry for a wholesome South Indian meal.
